Corn Fritters with Crispy Bacon and Chilli Undressed



4 rashers of bacon

1 cup SR flour

1 egg

1 cup milk

400g can whole kernel corn

1-2 tbsp coriander or chopped chives

Oil for cooking



Grill the bacon and keep warm in the oven on absorbent paper. 

Place the flour in a bowl, make a well in the centre and break in the egg and add half the milk.  Whisk together until smooth, adding the remainder of the milk.  The add the drained corn, chives and/or coriander, salt and pepper. 

Heat the oil in a frying pan and cook big spoonful’s of the mixture.  Keep warm in the oven until ready to serve.

To serve, place a large corn fritter onto a warm plate, add a slice of cooked bacon and a slather of Chilli Undressed.  Add another fritter, another slice of cooked bacon, another slather of Chilli Undressed (if you dare) and top off with a dollop of sour cream.  Can be served with avocado if in season.
