Chicken Lime Caesar Salad using Lime Mustard Seed Dressing – Gluten Free
1 large Cos lettuce
50 g croutons (make your own by tearing - not cutting - the bread to ensure nooks and crannies catch the dressing and add texture. Preheat oven to 375 deg. Toss bread with olive oil on a baking sheet; season with salt and pepper. Bake, tossing occasionally, until golden, 10-15 minutes)
1 large avocado, sliced thickly
2 cups sliced cooked chicken
2 eggs boiled and quartered
Parmesan cheese, finely sliced
¼ cup SAL Lime Mustard Seed Dressing
1 tbsp lime juice
1 egg yolk
3 large anchovies (optional)3T finely grated Parmesan
The dressing: Chop anchovy fillets and add to whisked egg yolk, ¼ cup of Lime Mustard Seed dressing and the table spoon of lime juice until mixture is thick and glossy. Whisk in grated parmesan. Season with salt and pepper and more lime juice if desired.
Use your hands to gently toss the torn cos lettuce & croutons with the dressing in a large bowl. When lettuce is covered evenly in dressing, add avocado & sliced chicken then top off with the shaved Parmesan.
