We’re keeping the summer vibes going with this fresh and zesty prawn and mango salad – dressed with our delicious Lime and Chilli Plash!
Ingredients (serves 4)
- 1kg cooked prawns
- 1 ripe mango, diced
- 2 bok choy, chopped
- 1 large carrot, grated
- 2 spring onions, chopped
- 1 cob of fresh corn
- 30g peanuts, chopped
- 15g coriander, chopped
- A few grinds of salt and pepper
- 150ml Lime and Chilli Plash
Method
- Slice the kernels off your corn and prepare all your other ingredients
- Combine all the ingredients in a large mixing bowl and mix well
- Serve in bowls with some extra coriander to garnish, and some fresh lime to squeeze over the top
