Hearty, wholesome, and full of flavour, these baked potatoes with smoked fish and our vibrant Saffron Lime Dressing are comfort food with a citrusy twist. The richness of the smoked fish is perfectly balanced by the zesty brightness of our signature dressing – made with fragrant saffron, fresh lime juice, and a hint of garlic. Ideal for a cosy dinner or a laid-back lunch, this dish is proof that simple ingredients can create something truly special.
Ingredients (serves 4)
- 4 large potatoes potatoes
- 250g smoked fish*, roughly chopped
- 1 cup frozen peas
- 4 medium gherkins, roughly chopped
- St Andrews Limes Saffron Lime Dressing
- Handful of dill
- Drizzle of olive oil
- 4 Tbsp butter
- Freshly ground sea salt and black pepper, to taste
*We love it with mackerel, but you can try it with any smoked fish
Method
- Preheat the oven to 160°C. Put the potatoes on an oven tray, drizzle with olive oil, and sprinkle with salt and pepper. Bake for 1.5 hours at 160°C, then a further 30 minutes at 200°C.
- Defrost your frozen peas – put them in a small bowl and pour boiling water on them. Leave for five minutes.
- In a large bowl, mix together the smoked fish, peas, gherkin, dill, and a decent drizzle of Saffron Lime Dressing.
- When the potatoes are ready, slice them open and press in a knob of butter with a fork. Then fill the potatoes with your smoked fish mix.
- Drizzle with Saffron Lime Dressing, garnish with dill, and sprinkle with salt and pepper. Enjoy!
